Ingredients

1 - 1 1/2 lb boneless skinless chicken breast , cut into 1-inch cubes
1 tablespoon olive oil
1/2 teaspoon ras el hanout spice mix ( Ras El Hanout - Moroccan Spice Mix )
1/4 teaspoon garlic powder
1 tablespoon olive oil
1/2 large onion , finely chopped
2 garlic cloves , crushed
1 tablespoon fresh cilantro
1 teaspoon ground ginger
1 teaspoon ras el hanout spice mix ( Ras El Hanout - Moroccan Spice Mix )
1/2 teaspoon ground cumin
2 cinnamon sticks
1 chicken bouillon cube
2 cups water
1/4 cup golden raisins or 1/4 cup currants
1 -2 tablespoon sliced almonds
1/2 preserved lemon , flesh removed & cut into thin strips
2 -3 tablespoons honey , good quality
1 1/2 cups uncooked instant couscous
salt & pepper , to taste

Instructions

1.In a bowl, mix 1 tablespoon of olive oil, 1/2 teaspoon of ras el hanout spice mix, 1/4 teaspoon of garlic powder, and salt & pepper to taste.
2.Add chicken cubes to the bowl and mix well. Let it sit for 10-15 minutes.
3.In a pot, heat 1 tablespoon of olive oil. Add chopped onion and cook until softened.
4.Add 2 crushed garlic cloves, 1 tablespoon of fresh cilantro, 1 teaspoon of ground ginger, 1 teaspoon of ras el hanout spice mix, and 1/2 teaspoon of ground cumin. Cook for a minute or until fragrant.
5.Add 2 cinnamon sticks, 1 chicken bouillon cube, 2 cups of water, 1/4 cup of golden raisins or currants, sliced almonds, the preserved lemon, and 2-3 tablespoons of honey. Bring to a boil.
6.Reduce heat to low and add marinated chicken cubes. Cover and cook for 10-12 minutes or until chicken is cooked through.
7.Remove cinnamon sticks and discard.
8.In a separate pot, cook 1 1/2 cups of instant couscous according to package directions.
9.Serve chicken over couscous. Garnish with fresh cilantro.
