1 cup smoked turkey sausage , diced
2 small halibut steaks , cubed
1 cup onion , minced
2 tomatoes , diced

1 cup couscous

Instructions

1.Heat 1 tablespoon of olive oil in a deep pan over medium heat.
2.Add diced smoked turkey sausage and cook for 5 minutes or until browned.
3.Add cubed halibut steaks and cook for another 5 minutes or until the fish is cooked through.
4.Remove the sausage and fish from the pan and set aside on a plate.
5.In the same pan, heat 1 tablespoon of olive oil and add minced onion and cook for 5 minutes or until softened.
6.Add diced tomatoes, chopped garlic, garbanzo beans, cayenne pepper, cinnamon, allspice, and ground cloves. Cook for 10 minutes until the vegetables are soft.
7.Stir in tomato puree, chicken stock, salt, and pepper. Bring the mixture to a boil and then let it simmer for 10 minutes.
8.Stir in couscous, spinach, cilantro, cooked sausage, and fish. Cover the pan and turn off the heat. Let the mixture sit for 5 minutes, or until the couscous is cooked and fluffy.
9.Fluff the couscous with a fork and serve hot.
