2 teaspoons custard powder
3 teaspoons cornflour
3 teaspoons cake flour
2 tablespoons cold milk
1/2 cup sugar
4 large eggs , separated
1/2 teaspoon almond essence

Instructions

1.Preheat oven to 350°F/180°C.

4.In a mixing bowl, whisk together the custard powder, cornflour, cake flour, and 2 tablespoons of cold milk until smooth. Gradually add the sugar and egg yolks, whisking continuously. Remove the cinnamon stick from the hot milk mixture and slowly pour it into the mixing bowl while whisking gently.
5.Pour the custard mixture back into the saucepan and cook on medium heat for 10-15 minutes, stirring continuously until the mixture thickens enough to coat a spoon.
6.In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the custard mixture, along with the almond essence.
7.Pour the mixture into the pre-baked pastry crust and sprinkle with cinnamon-sugar mixture.
8.Bake for 20-25 minutes or until the custard is set and the topping is golden brown.
