Ingredients

2 2 lbs collard greens or 2 lbs spinach , chopped
2 tablespoons flour
1 lemon , juice of
oil ( for frying )
1 onion , chopped
2 -3 tomatoes , chopped
1 chili pepper , chopped ( optional )
salt
cayenne pepper or red pepper
Sukuma Wiki 2 is a popular vegetable dish in East Africa, made with either collard greens or spinach. Instructions

1.In a pot, bring water to a boil and add the chopped collard greens or spinach.
2.Cover and cook for 5 minutes or until tender.
3.Drain the greens in a colander and press out any excess water.
4.Sprinkle with flour and toss to coat.
5.In a frying pan, heat up oil and fry the greens until golden brown.
6.Transfer to a serving plate and pour lemon juice over the greens.
