Ingredients

1 can tuna , drained of oil or ( 5 ounce ) can water
4 medium baking potatoes , boiled and mashed
1/2 cup scallion , chopped fine
1/2 cup fresh parsley leaves , chopped fine
1/2 cup cilantro leaf , chopped fine
2 to 3 ounces Greek feta cheese , crumbled
4 eggs
1 teaspoon turmeric
1/2 tablespoon ground caraway
1/2 tablespoon ground coriander
1/2 tablespoon garlic powder
1 -2 tablespoon capers
salt and pepper , to taste
2 cups canola oil or 2 cups vegetable oil
1 package egg roll wraps

Instructions

1.In a large mixing bowl, combine the tuna, mashed potatoes, scallions, parsley, cilantro, feta cheese, capers, turmeric, ground caraway, coriander, and garlic powder. Mix well until all the ingredients are evenly distributed.
2.Beat the eggs in a separate bowl and set aside.
3.Lay out an egg roll wrap on a clean, flat surface. Place a heaping spoonful of the tuna-potato mixture in the center of the egg roll wrap.

7.Remove the turnovers from the oil using a slotted spoon and drain on a plate lined with paper towels. Serve hot with your choice of dipping sauce.
