Ingredients

1 lb carrot , peeled and medium grated
2 green cardamom pods
1 dried hot chili pepper
1 tablespoon fresh ginger , minced
1 garlic clove , minced
1 teaspoon sea salt
1 1/2 cups sugar
1/2 cup water
3/4 cup distilled white vinegar

Instructions

1.In a pan, dry roast the cardamom pods and chili pepper until fragrant and slightly charred.

3.In the same pan, sauté the minced garlic and ginger in a little oil until fragrant.
4.Add the grated carrot and salt to the pan and sauté for a few minutes.
5.Add the ground cardamom and chili powder to the pan and mix well.
6.Stir in the sugar and mix well until the sugar has completely dissolved.
7.Add the water and vinegar and mix well. Simmer the mixture for 10-15 minutes until the liquid has reduced and the mixture has thickened.
8.Remove from the heat and let it cool completely. Serve chilled or at room temperature.
