Ingredients

6 chicken drumsticks ( thighs are even better , but more fat content )
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
1/2 teaspoon ground allspice
1/2 teaspoon hot paprika
1 teaspoon turmeric
1/2 teaspoon ground cumin
1 dash cumin seed ( toasted and crushed is preferred , but not necessary )
1 yellow onion , chopped
1 tablespoon canola oil
1/2 cup fresh parsley , chopped
2 garlic cloves
2 teaspoons harissa
1 teaspoon crystallized ginger ( omitting if unavailable )
1/4 cup green olives , pitted
1 can artichoke bottoms , drained ( NOT marinated ! )
kosher salt , for sprinkling
1/4 cup frozen green pea
water , at room temperature

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Rub the chicken drumsticks with sea salt, garlic powder, allspice, hot paprika, turmeric, ground cumin, and cumin seed.
3.In a large Dutch oven over medium heat, sauté the onion in canola oil until translucent, about 5 minutes.
4.Add the parsley, garlic, harissa, and crystallized ginger to the pot and stir for 1 minute.
5.Add the seasoned chicken to the pot and brown for 5-8 minutes.
6.Add enough water to the pot to cover the chicken, then add the olives and artichoke bottoms.
7.Bring the pot to a boil, then reduce the heat to low, and cover the pot with a lid.
8.Put the pot in the oven and bake for 35-40 minutes.
9.Remove the pot from the oven and sprinkle with kosher salt.
10.Serve with green peas sprinkled on top.
