3 jalapenos , seeded and minced

3 lbs roma tomatoes , peeled and chopped
3 1/2 cups jasmine rice
4 1/4 cups fat free chicken broth
1 cup dry red wine
2 teaspoons coarse sea salt
1/2 teaspoon pepper
6 ounces smoked ham , diced small
2 cups frozen baby peas , thawed and at room temp
1/4 cup scallion , chopped

Instructions

1.In a large skillet over medium heat, cook the turkey bacon until it’s crispy. Set aside.
2.In the same skillet, sauté the shallots, jalapeño, and garlic until they’re fragrant.
3.Add the tomatoes and simmer for about 10 minutes, until the mixture thickens.
4.Pour in the rice, chicken broth, red wine, sea salt, and pepper. Stir to combine.
5.Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 15 minutes, until most of the liquid has been absorbed.
6.Add the ham and peas and simmer for another 5 minutes, until heated through and the rice is tender.
7.Sprinkle the scallions over the top and serve.
