Ingredients

1 1/2 lbs beef stew meat , cut into 3/4 inch pieces
2 tablespoons cooking oil

2 cups coconut milk

1 package frozen cut green beans or ( 9 ounce ) package frozen okra , cut up
1 cup long grain rice
1 cup unsalted peanuts , chopped
