Ingredients

1 egg
50 g butter
70 g brown sugar
250 ml buttermilk
50 ml apricot jam
180 g cake flour
180 g nutty wheat flour
5 ml salt
5 ml bicarbonate of soda
410 g apricot halves in juice
60 g walnuts
50 g sultanas

Instructions

1.Preheat oven to 180°C and grease a loaf tin.
2.In a bowl, mix together butter and sugar until creamy.
3.Beat in the egg.
4.Stir in the buttermilk and apricot jam.
5.In a separate bowl, mix together flour, salt and bicarbonate of soda.
6.Now mix the two bowls together.
7.Finely chop the walnuts and apricots.
8.Mix in the walnuts, sultanas and apricots.
9.Pour the cake mixture into greased loaf tin.
10.Bake in the oven for approx. 45-50 minutes. The bread is ready when a knife comes out clean.
11.Leave to cool on a cooling rack.
