Ingredients

4 chicken drumsticks , skinless ( or other bone-in cuts )
1 medium brown onion , finely diced
200 g canned chick-peas , rinsed & drained
2 1/2 liters water
2 inches cinnamon sticks
1/2 lemon , juice of
1 large egg yolk , beaten
1/4 cup fresh parsley , finely chopped
2 -3 teaspoons olive oil
1 1/2 tablespoons basmati rice
salt & pepper
Shorba Baidha is a traditional Algerian soup that is made with chicken, chickpeas, and aromatic spices. It is a hearty and comforting dish that is perfect for warming up during cold winter days. This soup can be served as an appetizer or as a main course with crusty bread. Its rich flavor and warming properties make it a popular choice for dinner parties and family gatherings.

Instructions

1.Rinse the chicken drumsticks and pat them dry with paper towels. Season generously with salt and pepper.
2.Heat the olive oil in a large pot over medium heat. Add the chicken drumsticks and cook until browned on all sides. Remove the chicken and set aside.
3.In the same pot, add the diced onions and sauté until softened. Add 2 1/2 liters of water, chickpeas, cinnamon sticks, and basmati rice. Bring to a boil, then reduce the heat to low and simmer for 1 1/2 hours.
4.After simmering for an hour, remove the cinnamon sticks and discard. Using a fork, shred the chicken meat off the bones, discarding the bones. Return the chicken meat to the pot and stir in the lemon juice.
5.Just before serving, whisk the beaten egg yolk into the soup, stirring constantly to prevent curdling. Cook for another minute to thicken the soup slightly. Serve hot with a garnish of fresh parsley.
