Our Family Favourite Lemon Spring - Easter Cake is a deliciously tangy and moist cake that is perfect for Easter or any springtime occasion. This cake is made with fresh lemons, which give it a zesty, citrusy flavor that pairs well with the soft and creamy frosting. The cake is easy to make and requires only a few simple ingredients, making it a great recipe for novice bakers. Instructions

1.Preheat the oven to 180 degrees C. Grease two 20.5cm/8" sandwich tins.
2.Cream the margarine and sugar together in a bowl until light and fluffy.
3.Beat in the eggs, one at a time, and then sift in the flour and baking powder and fold in gently.
4.Stir in the grated lemon zest, water and food coloring (if using).
5.Divide the mixture evenly between the tins and level out.
6.Bake in the oven for 20-25 mins until golden-brown and springy to the touch.
7.Remove from the oven, allow to cool for a few minutes and then remove from the tin using a palette knife.
8.Leave to cool completely on a wire rack.
9.For the frosting, in a bowl, beat the margarine or butter until smooth.
10.Add the orange flower water and enough icing sugar to make the mixture stiff but creamy.
11.Spread half of the frosting over one cake, and then sandwich together using the other cake on top.
12.Spread the remaining frosting over the top and sides of the cake.
13.Finally, mix the lemon juice, water and food coloring (if using) into the remaining icing sugar to make a smooth, runny icing.
14.Using a spoon, slowly pour the icing over the top of the cake, allowing it to drizzle down the sides.
15.Decorate with miniature chocolate eggs.
