1/2 lb dried black-eyed peas
2 small onions
1 red pepper

Instructions

1.Rinse the black-eyed peas and soak them for at least 4 hours, or overnight.
2.Drain the water and put the peas into a blender, along with chopped onions, red pepper, white pepper, and salt. Blend until it forms a thick paste.
3.Pour the mixture into a large bowl and using a whisk or hand mixer, whisk it until it becomes light and fluffy.
4.Add chopped tomatoes, green pepper, and parsley leaves to the mixture.
5.In a large frying pan, heat oil at medium-high heat and using a spoon or scoop, drop blobs of the mixture into the oil.
6.Fry the balls, turning them over occasionally, until they become golden-brown on both sides.
7.Once done, use a slotted spoon to remove the balls from the oil and drain them on paper towels to remove any excess oil. Serve hot.
