Instructions

1.Slice each hard-boiled egg in half lengthwise and carefully remove the yolks.

3.Add the mashed egg yolks, green onions or shallots, and capers (if using) to the avocado mixture and stir until well combined.
4.Spoon the avocado mixture into the egg whites and top with slivers of red, yellow, or green bell pepper.
