Instructions

1.Preheat the oven to 375F.
2.In a large bowl, combine the hot chicken broth, uncooked couscous, and lemon zest (if desired). Stir well and let sit for 5 minutes.
3.Add the chopped red bell pepper and slivered onion to the bowl with the couscous. Drizzle with 2 teaspoons of olive oil and season with salt and black pepper. Stir well.
4.Cut 4 pieces of parchment paper into 10x12 inch rectangles. Fold each in half to make a crease and then reopen, so that you have 4 rectangles with a center crease.
5.Divide the couscous mixture into 4 equal portions and spoon it onto one half of each piece of parchment paper, placing it near the center crease. Place 4 shrimp on top of each portion of couscous.
6.Spoon 2 teaspoons of sun-dried tomato pesto or basil pesto onto the shrimp.
7.Fold the other half of the parchment paper over the shrimp to create a rectangle shape, then seal the edges by making overlapping folds along the edge all around.
8.Place the parchment paper parcels on a baking sheet and place it into the oven. Bake for 15 to 17 minutes, or until the shrimp are cooked through and the couscous is tender.
9.Once done, serve the parchment paper parcels on plates and cut them open at the table to enjoy the fragrant aroma and flavors.
