Ingredients

2 1/4 lbs chopped fresh spinach ( or 2 1/4 c cooked or 12 oz . frozen )
2 large tomatoes , thinly sliced
2 tablespoons crunchy peanut butter or 3 tablespoons crushed roasted peanuts
1 small onion , thinly sliced
1 teaspoon salt , to taste

Kisamvu Na Karanga is a popular Tanzanian dish that is made with cassava leaves, peanut butter or crushed roasted peanuts, and tomatoes. Instructions

1.Rinse the spinach and cook with little water for 5-10 minutes until wilted. Drain and squeeze to remove excess water.
2.In a pan, sauté the onions until golden brown. Add the chopped tomatoes, salt, and pepper. Cook for 2-3 minutes, until the tomatoes are tender.
3.Add either crunchy peanut butter or crushed roasted peanuts to the mixture. Cook for another 2-3 minutes.
4.Add the spinach to the pan. Mix the spinach and peanut tomato sauce together for a homogenous mixture.
5.Cook the mixture for another 5-8 minutes until well heated.
6.Enjoy with your favorite main dish, such as rice or Ugali.
