Ingredients

400 g basmati rice , washed
6 limes , juice of
3 tablespoons coriander , finely chopped , stalks and leaves separated
600 ml coconut milk
salt & freshly ground black pepper
8 large king prawns , peeled and de-veined
1 tablespoon vegetable oil
1 stalk lemongrass
2 1/2 cm fresh gingerroot , chopped
2 large garlic cloves , crushed
2 shallots , finely chopped
2 red chilies , chopped
1 teaspoon garam masala
1 teaspoon ground turmeric
2 plum tomatoes , seeded and finely chopped
King Prawns in Swahili Sauce is a spicy recipe from East Africa. It's a traditional dish eaten on special occasions. The dish's main ingredients are king prawns, coconut milk and spices common in African cuisine such as garam masala and tumeric. Instructions

1.Rinse the basmati rice in a sieve under cold water until the water runs clear.
2.Pour 650ml of boiling water to the rinsed rice and season it with salt as per taste. Cover and cook for 10-12 minutes.
3.In a pan, heat the oil and add finely chopped lemongrass, ginger, garlic and shallots. Saute till fragrant over medium heat.
4.Mix well the chopped chillies, garam masala, turmeric, tomato and half of the coriander to the pan.
5.Pour in the coconut milk and a pinch of salt, then reduce the flame to low and simmer for 8-10 minutes stirring occasionally.
6.Heat up another pan and add little oil to it. Cook prawns till pink and well cooked.
7.Serve hot with rice and garnish with remaining coriander and a lime wedge.
