Ingredients

1 1/2 lbs tripe , precooked and cut into 1 inch squares
salt
water
4 cups collard greens , finely chopped
8 ounces onions
2 medium tomatoes
2 red chili peppers
4 ounces cornmeal , prepare according to box

Instructions

1.Rinse precooked tripe in cold water and sprinkle with salt. Set aside.
2.In a large pot, bring 6 cups of water to a boil. Add chopped collard greens and onions, and cook for 10 minutes.
3.Add tomatoes and red chili peppers, and continue cooking for another 10 minutes.
4.Add precooked tripe to the pot and continue cooking until tripe is tender, about 1 hour.
5.In a separate pot, boil 4 cups of water and slowly add in the cornmeal, stirring constantly to avoid lumps.
6.Cook until cornmeal is soft and fluffy, about 10 minutes.
7.Serve the tripe stew hot over a bed of cornmeal.
