Ingredients

4 cups medium couscous
3/4 cup frozen peas
3/4 cup frozen broad bean
3 garlic cloves
1 teaspoon salt
1/2 teaspoon olive oil
1 tablespoon margarine or 1 tablespoon butter
1 tablespoon ghee or 1 tablespoon clarified butter
water
Talha's Favourite Couscous (Ta'am Bil Jilbana & Foul) is a delicious dish from Middle Eastern cuisine. Couscous is a staple grain in North Africa, and this recipe combines it with nutritious frozen vegetables like peas and broad beans, to create a delicious and aromatic dish. This dish is a great vegan option that can be enjoyed as a main dish for lunch or dinner. This healthy and flavorful dish will tantalize your taste buds and leave you yearning for more.

Instructions

1.In a large pot, bring to boil 6 cups of water, salt, garlic, olive oil, margarine and ghee/butter.
2.In the meantime, spread the couscous on a large tray and leave to dry for 10 minutes.
3.Wet your hands with cold water and sprinkle some water on the couscous, rubbing it between your hands to break any lumps.
4.Sprinkle half of the couscous onto a couscous steamer, place the steamer on top of the pot and cover it with a lid tightly.
5.Cook the couscous for 10 minutes.
6.Remove couscous steamer, empty the couscous into a large tray and break any lumps again.
7.Rinse the peas and the broad beans quickly, add to boiling water and let cook for few minutes.
8.Remove the vegetables and add them to the couscous, sprinkle some more water on top of the couscous and break any remaining lumps.
9.Put the steamer back on top of the pot, add the remaining couscous, and cook for another 10 minutes, then remove the steamer again.
10.Empty couscous into large tray and add 1-2 tbsp of butter or olive oil and mix well.
11.Serve the couscous hot with the vegetables mixed in.
