Ingredients

10 pints water
9 ounces fresh ginger , sliced and bruised
2 1/4 cups sugar
1/4 cup raisins ( handful )
1 envelope instant yeast

Instructions

1.In a large pot, bring the water and ginger to a boil and then reduce heat and let it simmer for 45 minutes.
2.Strain the ginger mixture through a fine mesh strainer into a large bowl, discarding the ginger.
3.Stir in sugar until it's dissolved. Allow it to cool to room temperature.
4.Add in raisins, instant yeast, and stir well. Cover the bowl and let it sit at room temperature for 24 hours before transferring it into bottles.
5.Leave the ginger beer in the bottles for another 24 hours before refrigerating.
6.Serve cold with ice.
