Ingredients

2 tablespoons olive oil
5 cloves garlic , minced
2 jalapeno peppers , minced
1 teaspoon ground caraway ( you can use the whole seeds ... but this is a light soup and they will sink to the bottom of the bowl )
1 teaspoon dried oregano
2 cans chickpeas , drained and rinsed ( garbanzos )
2 cans vegetable broth or 4 cups of your own vegetable broth
2 cups water
5 tablespoons fresh lemon juice
1/3 cup fresh cilantro , chopped
salt and pepper

Instructions

1.Heat the olive oil in a large pot over medium-high heat. Add garlic and jalapeño peppers and cook until fragrant, about 1 minute.
2.Add caraway and oregano and cook until fragrant, about 30 seconds.
3.Add chickpeas, vegetable broth, water, lemon juice, cilantro, salt, and pepper. Bring to a boil and then reduce heat to simmer for 20 minutes.
4.Use an immersion blender to blend until smooth, or let soup cool and then blend in a blender until smooth.
5.Serve hot with a sprinkle of cilantro and a drizzle of olive oil, if desired.
