500 g frozen broad beans ( or 1kg of fresh , still in pods )
1 1/2 tablespoons lemon juice
2 1/2 tablespoons of fresh mint , chopped
2 1/2 tablespoons olive oil , fruity

Instructions

1.If using fresh broad beans, remove them from the pods and place in a pot of boiling water for 3-5 minutes until tender. Drain and rinse under cold water.
2.If using frozen broad beans, place in a pot of boiling water for 2-3 minutes until tender. Drain and rinse under cold water.
3.Place the broad beans in a food processor and add lemon juice, chopped mint, olive oil, salt, and black pepper to taste.
4.Pulse until mixture is smooth and well combined.
5.Serve the puree at room temperature, garnished with additional mint leaves, if desired.
