Ingredients

1 kg lamb , jointed
2 large onions , chopped
4 tomatoes , peeled and chopped
2 tablespoons parsley , chopped
1 tablespoon baharat
1/2 teaspoon ground lime ( loomi )
1/2 teaspoon turmeric
2 cups rice
2 1/2 cups water or 2 1/2 cups stock

Machbous is a popular Gulf Coast dish that is full of flavor and tradition. It is usually prepared for special occasions or when guests come over for dinner. Instructions

1.Heat oil in a pot and add the chopped onions, sauté until transparent.
2.Add the lamb and cook until brown on all sides.
3.Add the peeled and chopped tomatoes, turmeric, baharat, ground lime, and salt, then stir and cook for around 10 minutes.
4.Add enough water or stock to cook the meat and bring it to a boil.
5.Cover the pot and let it simmer for around 1 hour, until the meat is tender.
6.In a separate pot, cook the rice according to package directions, then add it to the pot with the spiced lamb.
7.Let it cook for an additional 10 to 15 minutes until the flavors have combined and the rice has absorbed the liquid.
8.Sprinkle with chopped parsley before serving.
