Ingredients

1 teaspoon active dry yeast
1/4 cup water
1/2 teaspoon sugar
1 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon fresh ground black pepper
1/2 cup milk
1/2 lb salt cod fish , soaked in cold water for 1/2 hour , rinsed 3 times , and shredded ( or substitute any cooked , flaky white fish )
1 medium onion , minced
2 seasoning bell peppers , seeds and stems removed , minced ( or substitute Yellow Wax Hots )
1/2 congo habanero pepper , seeds and stem removed , minced ( Habanero )
1/2 cup minced green onion
1 teaspoon minced fresh thyme ( or substitute 2 teaspoons dried thyme )
1 egg , beaten
oil ( for frying )

Instructions

1.In a small bowl, dissolve the yeast in the water with the sugar, let it sit for 3 to 5 minutes.
2.In a medium-sized bowl, whisk together the flour, baking powder, and black pepper.
3.Slowly add the yeast mixture, milk, and egg to the flour mixture, whisking until the mixture is smooth and free of lumps.
4.Add the cod fish, onion, bell peppers, habanero pepper, green onion, and thyme to the bowl and mix well.
5.Cover the bowl with a kitchen towel and allow it to rest for at least 30 minutes.
6.In a large frying pan, heat the oil over medium-high heat. Using a tablespoon or an ice cream scoop, make balls from the dough, then drop them into the hot oil, turning them occasionally, until they are golden brown on all sides (about 5 minutes).
7.Using a slotted spoon, remove the hot Accras from the frying pan and drain them on paper towels.
