2 cups finely chopped dried apricots
1 1/3 cups orange juice

2 2/3 cups all-purpose flour

3/4 cup cold unsalted butter or 3/4 cup pareve margarine
2/3 cup sugar
1 egg
1 egg white
1/2 orange , zest of , grated
Apricot Hamentaschen, also known as Hamantashen, are a traditional Jewish pastry eaten during the holiday of Purim. The cookies are shaped like triangles to represent the hat worn by Haman, the villain of the Purim story. Instructions

1.Combine apricots, orange juice, honey and orange zest in a medium saucepan. Bring to a boil over high heat.
2.Reduce heat to medium-low and continue to cook, stirring occasionally, until the mixture has thickened, about 20 to 25 minutes.
3.Remove from heat and let cool to room temperature.
4.In a large bowl, whisk together flour, baking powder and salt. Cut in butter or margarine using pastry cutter or fork until the texture is coarse. Mix in sugar and orange zest. Add egg and egg white, mixing until the dough comes together.
5.Preheat oven to 375°F. Roll out the dough on a well-floured surface to 1/8 inch thickness. Use a 3 inch cookie cutter to cut dough into circles. Place a scant tablespoon of cooled apricot filling in the center of each circle, then fold in the edges to create a triangular shape with the filling still visible in the center of the cookie dough.
6.Place the cookies on a parchment-lined baking sheet and bake until golden brown, about 15-20 minutes. Let cool on a wire rack.
