Ingredients

1 whole chicken , cut into 10 pieces and fat trimmed
water to cover
3 slices fresh ginger
1 1/2 cups water
3 tablespoons soy sauce
1 tablespoon white sugar
1 tablespoon Korean hot pepper paste
1 tablespoon Korean hot pepper powder
2 teaspoons sesame oil
1 teaspoon crushed garlic
3 potatoes , peeled and cut into 1x2-inch pieces
1 carrot , peeled and cut into 1x2-inch pieces
1 yellow onion , peeled and cut into 1x2-inch pieces
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 green onions , chopped
1 teaspoon sesame seeds

Instructions

1.In a large pot, add the chicken, water, and ginger slices and bring to a boil.

4.In the same pot, add water, soy sauce, sugar, hot pepper paste, hot pepper powder, sesame oil, and garlic and stir until well combined.
5.Add the potatoes, carrot, onion, salt, and black pepper to the pot and bring to a boil.
6.Reduce heat to medium and simmer for 15-20 minutes or until the vegetables are tender.
7.Add the chicken back to the pot and stir until well coated with the sauce.
8.Simmer for an additional 15-20 minutes or until the chicken is cooked through.
9.Serve hot and garnish with chopped green onions and sesame seeds.
