Ingredients

1 lb carrots , peeled and sliced ( I find organic has the best flavor ) or 1 lb baby carrots , whole ( I find organic has the best flavor )
2 tablespoons brown sugar , packed
2 tablespoons butter ( real butter is always better ) or 2 tablespoons margarine ( real butter is always better )
1/2 teaspoon ground ginger ( grated , feel free to add more or less ) or 1 1/2 teaspoons fresh ginger ( grated , feel free to add more or less )

Instructions

1.Preheat the oven to 375 F.
2.In a large mixing bowl, combine the brown sugar and ground ginger, mixing well.
3.Add the peeled and sliced carrots, toss until well coated.
4.Add the butter or margarine, toss again until the butter is melted and the carrots are evenly coated.
5.Pour the carrots into a baking dish.
6.Bake for 35-45 minutes or until the carrots are tender and caramelized.
7.Serve hot garnished with fresh parsley or cilantro.
