Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large saucepan, bring 5 cups of water to a boil. Add the unpeeled shrimp and cook for 5 minutes, or until they turn pink. Drain and rinse the shrimp under cold water. Peel and devein the shrimp, and set them aside.
3.In another saucepan, bring 3 1/4 cups of water and salt to a boil. Reduce the heat to low and stir in the grits. Cook, stirring frequently, for 5-7 minutes, or until the grits thicken.
4.In a bowl, whisk together the eggs, milk, and garlic. Gradually stir in 1 1/2 cups of shredded cheese and the cooked shrimp.
5.Spread half of the cooked grits in the bottom of a greased 9 x 13-inch baking dish. Pour the shrimp mixture over the grits. Spread the remaining grits on top of the shrimp mixture.
6.Bake for 35-40 minutes, or until the casserole is set. Sprinkle the remaining shredded cheese on top of the casserole and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Garnish with chopped fresh parsley before serving.
