2 lbs chicken pieces
4 lbs purple onions , chopped
1 cup oil
1/2 cup Dijon mustard
2 bouillon cubes
2 teaspoons coarse black pepper
2 teaspoons chili pepper flakes ( hot )
2 lemons , juice of
salt , to taste
6 cups cooked rice
1 -2 bell pepper , green , thinly sliced
2 -4 tomatoes , ripe , sliced

Instructions

1.Place the chicken pieces in a large bowl.
2.In a separate bowl, mix together chopped onions, oil, Dijon mustard, bouillon cubes, coarse black pepper, chili pepper flakes, lemon juice, and salt.
3.Pour the mixture over the chicken pieces and mix until chicken is well coated.
4.Cover the bowl with plastic wrap and marinate the chicken in the fridge for at least 2 hours.
5.Preheat oven to 350°F (175°C).
6.Transfer the chicken and marinade into a baking pan.
7.Bake for 45-50 minutes until the chicken is golden brown and cooked through.
8.In a skillet, cook thinly sliced bell peppers and sliced tomatoes until they are slightly softened.
9.Serve the baked chicken with cooked rice and the sautéed vegetables on the side.
