1 tablespoon clear soya sauce
2 tablespoons plain flour
1/2 teaspoon powdered ginger
4 ounces button mushrooms
4 cloves garlic
1 slice gingerroot , about 1 inch across and 1/4 inch thick
3 tablespoons dark soya sauce
pepper or 1 pinch chili powder
2 tablespoons boiled water
2 tablespoons medium-dry sherry or 2 tablespoons rice wine ( optional )
2 teaspoons lemon juice
6 tablespoons oil or 6 tablespoons pork fat

Instructions

1.Cut the pork fillets or pork legs into thin slices.

4.Add the pork slices and fry until golden brown on both sides.
5.Slice the button mushrooms and mince the garlic and ginger.
6.Add the mushrooms, garlic, and ginger to the pan. Cook until fragrant.
7.In a separate bowl, mix together dark soya sauce, boiled water, medium-dry sherry or rice wine (optional), and lemon juice.
8.Pour the sauce into the pan and stir the meat and sauce together.
9.Reduce the heat to medium-low and let the meat simmer for 10 minutes or until fully cooked.
10.Sprinkle with pepper or chili powder to serve.
