Instructions

.Preheat the oven to 425°F.
.Cut the top off each garlic head to expose the cloves, then place them cut side up on a large sheet of foil.
.Drizzle with the olive oil and sprinkle with half a teaspoon of salt.
.Wrap the foil around the garlic to create a tightly sealed packet. Roast in the oven for 40 minutes or until tender.
.Remove garlic from the oven and let it cool.
.While the garlic is cooking, prepare the steaks. Use a sharp knife to cut a 2-inch pocket in the side of each steak.
.Stuff the spinach, diced sun-dried tomatoes, and brie cheese into the pocket, filling it as full as possible.
.Secure the pocket with wooden toothpicks.
.Season the steaks with salt and pepper.
.Heat up the grill or a skillet over medium-high heat.
.Cook the steaks for 4-5 minutes per side for medium-rare.
.Let the steak rest for a few minutes before serving.
.While the steaks are resting, mash the cooked garlic with a fork and add it to the mashed potatoes.
.Add the rosemary, 1/4 teaspoon salt, and black pepper to taste.
.Make the sauce by combining the balsamic vinegar and brown sugar in a small saucepan over medium-high heat.
.Bring the mixture to a boil and reduce the heat to low. Simmer until the sauce has thickened and reduce by half.
.Remove from heat.
.Drizzle the sauce over the steak and serve with garlic mashers.
