Ingredients

1/4 cup cooking oil
3 red sweet peppers ( seeded and cut in strips )
1 large onion , chopped
1 lb pork , cubed
5 chicken thighs , halved
4 cups boiling water
1 teaspoon saffron
4 bay leaves
2 chicken stock cubes
2 lbs kingklip or white perch fillets , cut in strips
12 ounces prawns , frozen
1 lb rice , uncooked
salt and pepper
8 ounces frozen green peas
1 lemon , juice of

Instructions

1.Heat the oil in the potjie.
2.Sauté the peppers and onions until the onions are soft.
3.Add the pork and chicken to the pot and cook for 5-10 minutes until browned.
4.Add the boiling water, saffron, bay leaves, and chicken stock cubes to the pot.
5.Bring to a boil and simmer for 20 minutes.
6.Add the fish, prawns, and rice, and season with salt and pepper.
7.Stir the pot well, then add the green peas and lemon juice.
8.Cover the pot with a lid and simmer for 30-35 minutes on low heat, until the rice is cooked.
9.Serve the Paella Potjie hot with lemon wedges.
