Ingredients

1/3 cup raisins
2 tablespoons hot water
1 1/8 cups uncooked long-grain white rice
3/4 cup sugar
3 tablespoons cornstarch
3 1/2 cups hot milk
1 teaspoon vanilla
2 tablespoons chopped pistachios
2 teaspoons rose water ( can use a sprinkle of cinnamon instead )
Ground Rice Pudding (Mehallabia), also known as Mahalabiya, is a creamy and fragrant Middle Eastern dessert. It's often served during special occasions and celebrations, such as Ramadan. This dessert is made with simple ingredients like rice, sugar, milk, and flavored with rose water or cinnamon. It's a delightful treat that's easy to make and can be served warm or chilled.

Instructions

1.Rinse the raisins and soak them in hot water for 10 minutes. Drain and set aside.
2.In a medium-sized saucepan, combine rice, sugar and cornstarch. Gradually add the hot milk, stirring constantly.
3.Place the saucepan on medium heat and cook, stirring constantly, until the mixture comes to a boil. Continue cooking for an additional 2-3 minutes or until the mixture thickens.
4.Stir in vanilla and rose water (or cinnamon) and remove from heat.
5.Pour the pudding into individual serving dishes and let it cool to room temperature. Once cooled, sprinkle each dish with soaked raisins and chopped pistachios.
6.Chill the pudding in the refrigerator for at least 1 hour before serving.
