Ingredients

1 small savoy cabbage ( or green cabbage , about 1 1/2 pounds )
sea salt
fresh ground black pepper
1 1/2 tablespoons butter
1 leek , including 1-2-inch of greens , diced
10 juniper berries , bruised in a mortar ( or spice grinder or food processor-1 or 2 pulses )
1/3 - 1/2 cup cream
1 cabbage , about 1 1/2 pounds ( Savoy or green )
8 cubes blue cheese

Instructions

1.Preheat the oven to 350°F (175°C).
2.Cut the cabbage into small wedges, about 8 pieces per head.
3.In a large pot of boiling salted water, blanch the cabbage for 4 minutes.
4.Drain and add them to a greased baking dish. Season with salt and pepper to taste.
5.In a large saucepan, melt the butter over medium heat. Add the leek and sauté for 5 minutes.
6.Add the bruised juniper berries and cook for another 2 minutes.
7.Pour 1/3-1/2 cup of cream into the pan and bring to a simmer. Pour the mixture over the cabbage.
8.Dot the cheese cubes on top of the cabbage.
9.Cover and bake for 20 minutes.
10.Uncover and bake for 10 more minutes, or until the cheese has melted and browned to your liking. Serve hot!
