Ingredients

4 cups rice
2 onions
5 tomatoes
1 cup fresh green coriander
1 tablespoon crushed garlic
1/2 cup corn oil
1 cup parsley
1 cup dill
1/2 sp cumin
3 tablespoons salt
1/2 tablespoon black pepper
2 tablespoons spices
2 tablespoons dried coriander
“Mahshi” is considered the King of Egyptian cuisine. It is a popular and well-loved dish made from rolled and stuffed silverbeet leaves with a filling of herbed rice. This savory dish is usually served hot with a side of yogurt or pickled vegetables. Its unique blend of herbs and spices gives it a rich and complex flavor that is sure to satisfy your taste buds. Instructions

1.Rinse the rice several times then soak for 1 hour.
2.Rinse the coriander, parsley, and dill well and chop finely.
3.Grate the tomatoes then finely chop the onions.
4.In a large bowl, mix the rice, chopped onions, grated tomatoes, finely chopped coriander, parsley, dill, spices, cumin, salt, black pepper, garlic, and corn oil. Mix well.
5.Stuff the mixture into silverbeet leaves an inch above the lower end of the leaf then roll the bottom side of the leaf to wrap the filling.
6.Arrange the rolls in a saucepan with the rolled side facing the bottom
7.Mix 5 cups of hot water with salt and lemon, then pour over the stuffed silverbeet leaves in the saucepan. Cover with a pot lid and cook over low heat for 1 hour.
8.Once done, let it sit for about 10 minutes before serving. Enjoy!
