2 cups elbow macaroni
1 cup oil
2 garlic cloves , crushed
1 hot chili pepper , cleaned and chopped
4 tomatoes , ripe and chopped
1/2 cup water
2 tablespoons vinegar
1 teaspoon cumin , ground
1 teaspoon salt ( to taste )
1 onion , cut in rings

Instructions

1.Rinse the lentils and place them in a large pot with enough water to cover them.

3.While the lentils are cooking, rinse the rice and place it in a separate pot with 4 cups of water.
4.Bring to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the rice is cooked and the water is absorbed.
5.Cook the elbow macaroni according to the instructions on the package.
6.In a large pan, heat the oil over medium-high heat.
7.Add the garlic and chili pepper, and cook for 1-2 minutes.
8.Add the chopped tomatoes and cook for another 5-7 minutes, or until they have broken down and become saucy.
9.Add the water, vinegar, cumin, and salt to the pan.
10.Simmer for 5-10 minutes, stirring occasionally, until the sauce has thickened.
11.To serve, place a scoop of rice on a plate, followed by a scoop of lentils and a scoop of macaroni.
12.Top with the tomato sauce and onion rings.
