Instructions

1.In a large saucepan over medium heat, heat the olive oil. Add the yellow onion and garlic and sauté until golden brown, about 6-7 minutes.
2.Add the tomato sauce, white vinegar, red pepper flakes, and salt. Stir well to combine and bring to a simmer. Cover and cook over low heat for about 10 minutes.
3.In a separate pot, bring the water, wild rice, and salt to a boil. Reduce the heat and simmer for about 20 minutes or until the rice is tender.
4.In another saucepan, heat the olive oil and cook the sliced onions until they are crispy and golden brown.
5.Add the finely chopped onion, garlic, cumin, and cinnamon to the same saucepan and cook until softened, about 5-6 minutes.
6.Add the chicken stock and lentils and bring to a boil. Reduce the heat and simmer for about 30 minutes or until the lentils are tender.
7.To serve, spoon the lentil mixture over the wild rice and top with the crispy onions. Garnish with fresh cilantro or flat-leaf Italian parsley leaves.
