1 kg eggplant , peeled and cut into rings
250 g minced meat
1 tablespoon butter or 1 tablespoon margarine
1 large chopped onion
1/4 cup water
3 tablespoons tomato paste
1 tablespoon sugar
salt and pepper

Instructions

1.Slice the eggplants into 1/2 inch thick rounds, salt them, and let them sit for 30 minutes to release excess moisture. Rinse with water and pat dry.
2.In a pan, heat oil over medium-high heat, and fry the eggplant rounds until golden brown. Place them on paper towels to absorb excess oil.
3.In the same pan, saute the minced meat and onions until browned. Add in tomato paste, water, sugar, salt, and pepper. Cover and cook for 10 minutes.
4.Preheat your oven to 350 degrees F.
5.In an oven-proof dish, layer the eggplant rounds and meat mixture alternately, starting and ending with eggplant. If desired, sprinkle with sultanas.
6.Bake in the preheated oven for 15-20 minutes, until heated through.
