Ingredients

4 whole fish , each about 12 oz
1 lemon , juice of
salt , to taste
fresh ground black pepper , to taste
3 garlic cloves , crushed
1 teaspoon ground cumin
2 medium onions , chopped
2 tablespoons oil
2 cups long grain rice
3 1/2 cups hot water
flour
oil ( for frying , preferably olive oil )
lemon wedge ( to garnish )
parsley sprig ( to garnish )

Instructions

1.Clean the fish, remove the head, spine, and tail and cut each into two pieces.
2.Season the fish with lemon, salt, and black pepper from both sides.
3.In a separate bowl, mix garlic, cumin, onions, and oil. Spread the mixture over the fish and let it marinate for 20 minutes.
4.Wash the rice with water twice, then soak it in warm water for 15 minutes.
5.In a small pan, fry the fish pieces until golden brown, on medium-high heat. Set them aside.
6.In a large pan, add the rice and hot water, then let it cook on low heat for 20 minutes.
7.Add the fried fish pieces on top of the rice. Cover the pan, then let it cook for 10 minutes or until the rice is fully cooked.
8.Garnish with lemon wedges and parsley sprigs, then serve hot.
