Ingredients

1 pizza dough
1 tablespoon butter
2 garlic cloves , crushed
1 bunch spinach , washed and shredded
4 scallions , thinly sliced
250 g fresh ricotta cheese
100 g feta cheese , crumbled
1/2 cup pine nuts
1/2 cup fresh breadcrumb
olive oil flavored cooking spray
lemon wedge , to serve
Spinach and cheese Turkish pides are a twist on the traditional Turkish pide that is typically topped with ground meat or lamb. This vegetarian-friendly dish is a hearty and filling choice that can be enjoyed for a main meal or a snack. The crust is crispy on the outside, and soft and chewy on the inside. The filling is made with wilted spinach, creamy ricotta and salty feta cheese with a crunchy addition of pine nuts. The lemon juice on top adds a bright and tangy contrast to the dish.

Instructions

1.Preheat the oven to 200°C.
2.Melt the butter in a pan over medium-high heat, then sauté the garlic for 1-2 minutes.
3.Add the shredded spinach and scallions to the pan, and cook until the spinach has wilted.
4.Remove from heat and mix in the crumbled feta cheese, fresh ricotta cheese, pine nuts, and breadcrumbs.
5.Roll out the pizza dough and cut it into four equal portions.
6.Shape each portion into a pide shape.
7.Spread the spinach and cheese mixture generously on top of each pide.
8.Spray with olive oil spray and bake for 10-12 minutes or until golden and crispy on the edges.
9.Serve with a squeeze of lemon juice on top.
