Ingredients

2 pounds beef short ribs , or more to taste
1 onion , quartered
1 piece fresh ginger , sliced
2 cloves garlic
5 tablespoons soy sauce
1/4 cup brown sugar
2 tablespoons Korean red pepper flakes ( gochugaru )
4 cloves garlic , minced
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 potatoes , peeled and cut into 2-inch pieces
2 carrots , peeled and cut into 2-inch pieces
1/2 cup Japanese beech mushrooms
7 chestnuts ( bam ) , or more to taste
7 dried Korean dates ( daechu )
1 tablespoon corn syrup ( mulyeot )
2 green onions , sliced
Korean Kalbi Jjim is a popular dish in Korean cuisine, and it's often served at special occasions or family gatherings. This dish is made by braising beef short ribs in a fragrant broth made with soy sauce, brown sugar, and Korean red pepper flakes. The ribs are then simmered with a variety of vegetables, chestnuts, and dates, giving the dish a sweet and savory flavor. Instructions

1.In a large pot, soak the beef short ribs in cold water for 30 minutes.
2.After 30 minutes, drain the water and add enough fresh cold water to cover the ribs. Add the onion, ginger, and garlic cloves, and bring to a boil over medium-high heat.
3.Once boiling, reduce the heat to low and simmer for 1 hour, skimming off any foam that forms on the surface.
4.In a separate bowl, mix together the soy sauce, brown sugar, Korean red pepper flakes, minced garlic, rice vinegar, and sesame oil.
5.After 1 hour, remove the ribs from the pot and discard the remaining water and solids. Rinse the pot and return the ribs to the pot.
6.Pour the soy sauce mixture over the ribs and add enough water to cover ¾ of the ribs. Add the potatoes, carrots, Japanese beech mushrooms, chestnuts, dried Korean dates, and corn syrup.
7.Bring everything to a boil over high heat, then reduce the heat to low and simmer for another 1 hour, stirring occasionally.
8.Once everything is tender and the vegetables are cooked through, add the green onions and serve hot with steamed rice.
