Stuffed Kufta is a traditional Middle Eastern dish that is often enjoyed during festive occasions and celebrations. This savory dish is made up of ground lamb mixed with spices, and then stuffed with a hard-boiled egg. The lamb meatballs are then cooked in a flavorful tomato and raisin sauce until they are tender and juicy. This dish is often served with a side of rice, couscous, or a traditional flatbread.

Instructions

.Preheat the oven to 350°F (180°C).
.In a large saucepan, heat the olive oil over medium heat. Add the thinly sliced onions and sauté until they are golden brown.
.Stir in the ras el hanout spice mix, saffron, and whole cloves. Mix well and then add the peeled, sliced tomatoes to the pot.
.Pour the water and tomato sauce over the mixture and stir in the raisins and honey. Season the mixture to taste with salt and mix well.
.Next, make the meatballs. In a mixing bowl, combine the ground lamb, grated onion, dried breadcrumbs, beaten egg, ras el hanout spice mix, salt, and pepper. Knead the mixture together until well-combined.
.Roll the meat mixture into golf ball-sized balls. Flatten each ball in the palm of your hand and place a hard-boiled egg wedge in the center of each ball. Mold the meat around the egg to completely cover it and then shape the meatball into an oval shape.
.Add the meatballs to the saucepan and gently stir to coat the meatballs with the sauce. Cover the pan and simmer the mixture over medium-low heat for 20-25 minutes.
.Transfer the meatballs and sauce to a baking dish and bake in the preheated oven for 20-25 minutes.
