Ingredients

1 lb frozen peas ( you can use fresh peas if you like )
1 lb lamb , cubes
3 tablespoons tomato paste
3 ripe and soft tomatoes
1 liter lamb stock ( home made or store bought , or stock cubes dissolved in water ) or 1 liter chicken stock ( home made or store bought , or stock cubes dissolved in water )
1 onion , finely chopped ( white or yellow )
2 garlic cloves , minced
2 teaspoons salt ( most people would prefer more salt , but I find that this is a good amount for my taste )
1 teaspoon dried coriander
1/2 teaspoon dry clove
1/2 teaspoon curry powder
1 teaspoon black pepper
1 dash Tabasco sauce ( optional )
1 cup water ( as needed )

Instructions

1.Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2.In a large baking dish, add in the frozen or fresh peas, chopped onion, minced garlic, and lamb cubes.
3.Cut the soft and ripe tomatoes into small pieces and add them to the baking dish.
4.In a bowl, mix together the tomato paste, dried coriander, dry clove, curry powder, black pepper, and salt. Pour the mixture over the lamb and pea mixture, ensuring that everything is evenly coated.
5.Add in the lamb or chicken stock, water, and dash of Tabasco sauce (if desired). Stir everything until combined.
6.Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 1 and 1/2 to 2 hours or until the lamb is cooked and peas are tender.
7.Remove the foil and bake for an additional 15-20 minutes to brown the top of the dish.
