Ingredients

1 cup split Bengal gram ( chana dal )
1 cup skinned split black lentils ( urad dal )
1/2 cup split yellow lentils ( moong dal )
1 cup rice
salt to taste
2 dried red chile peppers , or to taste
water , as needed
2 tablespoons cumin seeds
2 tablespoons cooking oil
Ada (Adai) is a popular South Indian breakfast dish that is also enjoyed as a snack or dinner and is similar to dosa. The dish is made by grinding different lentils and rice to a batter and fermenting it to a slightly sour taste. Traditionally, Ada (Adai) is served with coconut chutney or avial, a mix of vegetables in a coconut-based gravy, but it can also be eaten with sambar or any other curry. Instructions

1.Rinse and soak the chana dal, urad dal, moong dal, and rice in enough water for at least 4 hours or overnight.
2.Drain the water and grind the dals and rice with dried red chile peppers, cumin seeds, and salt to a smooth batter.
3.Transfer the batter to a large bowl and let it ferment for about 4 hours or until it is slightly sour.
4.Heat a non-stick skillet over medium heat and spread a ladleful of batter on it. Add oil around the edges.
5.Cook until the bottom is browned and the top is set.
6.Flip and cook the other side until it's golden brown.
7.Repeat with the remaining batter.
