4 large ripe tomatoes
1/2 cup water
2 cloves garlic
2 tablespoons ghee ( clarified butter )
1 teaspoon mustard seed
6 leaves fresh curry
1 cup water
2 teaspoons white sugar
1 teaspoon paprika
salt to taste
2 tablespoons chopped fresh cilantro
Easy Indian Tomato Soup (Saar) is a tangy and healthy soup that originated in the Southern Indian state of Karnataka. Also known as Rasam, it is a staple in many households and is served as an appetizer or a digestive after a heavy meal. Instructions

1.Roughly chop the tomatoes and garlic and keep aside.
2.Heat the ghee in a pot over medium heat.
3.Add mustard seeds and let them pop. Throw in the curry leaves and sauté for a few seconds.
4.Add the chopped garlic and sauté for a few more seconds until fragrant.
5.Next, add the chopped tomatoes, sprinkle sugar and paprika and stir well.
6.Add the water and salt to taste, bring to a boil and let it simmer for 10-15 minutes.
7.When the tomatoes are cooked, remove from heat and let it cool.
8.Once cool, blend the soup and adjust the seasoning as needed.
9.Garnish with chopped cilantro and serve hot!
