Ingredients

4 cups water
2 cups long grain rice , rinsed and drained
1/2 teaspoon salt , or to taste
2 tablespoons vegetable oil , divided
1/4 cup coarsely chopped cashews
7 small dried chile peppers
1 teaspoon mustard seed
1 teaspoon cumin seed
10 fresh curry leaves
1 teaspoon ground turmeric
1/4 cup fresh lime juice
2 tablespoons tamarind paste
1 cup plain yogurt
Exotic Indian Tangy Rice is a flavorful, colorful, and healthy rice dish. It combines a variety of fragrant spices like mustard seed, cumin seed, fresh curry leaves, and turmeric with the tanginess of lime juice and tamarind paste. Instructions

1.In a large pot, bring the water to a boil.
2.Add the rice and salt, and stir well.
3.Reduce heat to low, and cover the pot.
4.Simmer for 18-20 minutes, or until the rice is cooked and fluffy.
5.In a separate pan, heat 1 tablespoon vegetable oil over medium heat.
6.Add the cashews and chile peppers, and cook for 2-3 minutes, stirring occasionally.
7.Remove the chile peppers and cashews from the pan and set aside.
8.In the same pan, heat the remaining 1 tablespoon of vegetable oil over medium heat.
9.Add the mustard seed, cumin seed, curry leaves, and turmeric, and cook for 1-2 minutes, stirring occasionally.
10.Add the lime juice and tamarind paste, and stir well.
11.Add the cooked rice to the pan, and stir to combine.
12.Add the plain yogurt, cashews, and chile peppers, and stir again to distribute evenly.
