Ingredients

2 tablespoons vegetable oil

2 serrano chile peppers , seeded and chopped
2 large onions , chopped
2 cans garbanzo beans ( chickpeas ) , drained
3 tablespoons lemon juice
2/3 cup water
salt to taste
3 tablespoons minced fresh ginger root
2 large tomatoes , chopped
1/4 cup chopped fresh cilantro , for garnish

Instructions

1.Heat oil in a pan on medium heat.

4.Add minced fresh ginger root. Cook for 2-3 minutes.
5.Add chopped tomatoes. Cook for 7-8 minutes until tomatoes are soft and oil separates from the mixture.
6.Add the garbanzo beans, water and salt. Mix well.
7.Cook for 10-15 minutes until the chickpeas are soft.
8.Garnish with freshly chopped cilantro leaves.
