Ingredients

1 cup hulled , split pigeon peas ( toor dal )
2 cups water
2 cups water
1/2 teaspoon ground turmeric
salt , to taste
1 bunch amaranth greens , chopped
2 teaspoons cooking oil
1 teaspoon skinned split black lentils ( urad dal )
1 teaspoon mustard seed
1 teaspoon cumin seed
4 dried red chile peppers
1 pinch asafoetida powder
2 green chile peppers , cut into large chunks
1 sprig fresh curry leaves
Aaku Pappu (Dal with Greens) is a popular and traditional dish from the South Indian state of Andhra Pradesh. It is a simple yet flavorful combination of split pigeon peas (toor dal) and amaranth greens (also known as thotakura). The dish is seasoned with Indian spices such as cumin, mustard seeds, and dried red chile peppers, as well as asafoetida powder and curry leaves for a fragrant aroma. It is usually served with steamed rice or roti (Indian flatbread) and is a staple in many Indian households, especially during the monsoon season when greens are in abundance.

Instructions

1.Rinse the split pigeon peas (toor dal) in a fine-mesh strainer and set aside.
2.In a large pot, add 2 cups of water and the rinsed dal. Bring the water to a boil and then reduce the heat to a simmer.
3.Add the ground turmeric and salt. Cover and cook for about 30 minutes, or until the dal is tender.
4.In the meantime, heat the cooking oil in a small pan over medium-high heat. Add the skinned split black lentils (urad dal), mustard seed, and cumin seed. Cook for a few seconds until the spices start to pop.
5.Add the dried red chile peppers and asafoetida powder. Cook for a few more seconds, then add the chopped amaranth greens and green chile peppers.
6.Cook until the amaranth greens wilt and become tender, stirring occasionally.
7.Finally, add the cooked dal to the greens. Adjust the seasoning to taste. Serve hot with rice or roti.
