Indian-style pumpkin curry is a delicious and warming dish that incorporates traditional Indian spices and techniques. Instructions

1.Place pumpkin, water, turmeric, and salt in a pot and bring to a boil. Reduce heat to medium and let simmer until pumpkin is tender, about 15-20 minutes.
2.Grind grated coconut, dried red chile peppers, green chile pepper, water, and cumin seeds in a blender until smooth.
3.Heat 1 tablespoon of coconut oil in a skillet over medium heat. Add dried red chile peppers and mustard seeds until they start to splutter. Add split black lentils and cook until they turn golden brown. Add the coconut mixture, curry leaves, and remaining coconut oil and cook until the mixture turns slightly brown.
4.Pour the coconut mixture into the pot of pumpkin and stir to combine. Bring to a boil and then reduce heat to low. Let simmer for 5-10 minutes until the flavors meld together. Serve hot over rice or bread.
