Ingredients

1 pound potatoes
2 tablespoons cooking oil
1 tablespoon skinned split black lentils ( urad dal )
1 teaspoon split Bengal gram ( chana dal )
1 teaspoon mustard seed
2 dried red chile peppers , broken into pieces
1 pinch asafoetida powder
1 cup chopped onion
3 green chile peppers , sliced into thin rings
1 sprig fresh curry leaves
1/2 teaspoon ground turmeric
1/2 teaspoon ground red pepper
1 tablespoon minced fresh ginger root
salt to taste
2 tablespoons fresh lime juice , or to taste
2 tablespoons chopped fresh cilantro
Bangaladumpa (Potato) Upma Koora is a popular South Indian dish that is made from potatoes and a few simple spices. Instructions

1.Boil the potatoes until tender, then drain them and cut them into small pieces.

4.Add the onion and cook until soft, then add the green chile peppers, curry leaves, turmeric, ground red pepper, ginger root and salt, stirring everything together.
5.Add the potatoes to the pan and stir everything together well, then add the lime juice and cilantro and stir again.
6.Cook for a few minutes until heated through and serve hot.
